The H.A.C.C.P. self-control system (application of legislative decree n°155 of 26/05/87 "implementation of directives 93/43/eec and 96/3/eec on food hygiene") is applied in all the venues of the ethos group.
The auto-control system sets out to prevent consumer health hazards from occurring by defining of processing procedures that keep the processing phases, from incoming raw materials to the consumption, under control.
The procedures of the auto-control system are monitored and validated by means of audits and analyses performed at the production units.
The annual quality control programme establishes the type and frequency of the procedures performed at each production unit, the type of samples to test at external laboratories, as well as the analyses to perform on them.
